
Serves 2, Prep and Cook Time under 45 minutes
Ethan came up with this recipe when we were in college and calls it his signature dish. It is something he won’t let me make because it is the one he really loves to make for me. It has been a great birthday, valentines day, and weeknight meal that we both crave!
This is one of the easiest recipes you could find because it is only a few ingredients - some of which you might already have.
Ingredients:
1 Pound of Chicken breast, chopped into about 1” cubes
2 Green Bell Peppers, chopped into small-medium sized pieces
2 Sweet Onions, chopped into small-medium sized pieces
3 Tablespoons minced garlic
1 House of Tsang General Tso’s Sauce Bottle (11.5 oz)
1 Pound of fresh, sliced baby bella mushrooms
5 Tablespoons of Butter
Rice, optional
Directions:
Put the sliced mushrooms, the onion, the bell peppers, the garlic and 3 tablespoons of butter in a large saucepan over medium-high heat. Cover, stirring occasionally.
Note: The seasoning you see in the picture is Nature's Seasoning. We put it on EVERYTHING and would highly recommend that you get some for yourself! We have made this recipe with and without it so it is not essential it just adds some extra flavor.

In another saucepan, combine the chopped chicken breast and the remaining 2 tablespoons of butter over medium-high heat. I will sometimes add some extra garlic in with the chicken to give it some extra flavor. It never disappoints!
If you plan to serve rice with your dish, now would be the best time to start it.

Cook both pans until the chicken is cooked thoroughly and the vegetables are soft.
Pour about ⅓ of the General Tso’s sauce into the pan with the chicken, removing it from the heat as you stir it.

Pour the rest of the sauce into the pan with the softened vegetables, removing it from the heat as you stir it.

Serve hot over rice and enjoy!

As I said, this is our absolute favorite dinner. I love how easy it is to make and also how good it tastes! This is a regular in our house.
